1 cup Rice
3 pcs of Pandan leaves
1 grated Coconut. Squeeze out 2 cups of thick coconut milk from the grated coconut.
Salt to taste
Clean the rice and drain.
Cook the rice in the coconut milk with pandan leaves. Add in salt.
Add in some sliced shallots and ginger, optional
Stir once during cooking.
Rich after cooked remove the pandan leaves.
Serve this rice with sliced hard-boiled eggs, peanuts, cucumber and sambal Ikan bilis.
